Balance Bars

Sometimes, you just need a little something sweet without the guilt that typically comes along with it! These #Balance Bars are the perfect treat to satisfy your craving but stick to your #balance goals for the week!

Ingredients

  • 1 cup of almond or peanut butter (no sugar added)
  • 1/4 cup pure maple syrup
  • 1/2 cup coconut flour
  • 1 tbsp coconut oil
  • 1 cup no sugar added chocolate chips (I use the Hu brand)
  • Parchment paper

Directions

  • Mix together the nut butter, syrup and coconut flour in a medium mixing bowl.
  • Line a small pan (8x8 or 11x9 will work) with parchment paper and spread the thick mixture as evenly and as flat as possible into the pan. Using my hands seems to work best!
  • Then melt the chocolate chips and the coconut oil on the stove or in the microwave and pour the melted chocolate on top of the nut butter mixture
  • Freeze for 1 hour and then cut into 24 pieces using a serrated knife. (They won’t always be perfect squares and you may even have a few pieces crack. Don’t worry about making them perfect! It’s just about #balance!)
  • Enjoy one piece per night!
