Peppermint Protein Brownies

Everyone loves a "guilt free" holiday treat during the Christmas season! πŸŽ„ Enjoy this chocolatey peppermint treat with added protein, without any gluten, and only 9g of sugar per serving!

Peppermint Protein Brownies

Ingredients

  • 2 large overripe bananas
  • 1 large egg
  • Β½ cup coconut oil (melted)
  • Β½ cup coconut sugar
  • 1 tsp mint extract
  • Β½ cup oat flour 4 scoops of chocolate protein powder (I used Orgain Peppermint Hot Cocoa Protein Powder to enhance the peppermint flavor!)
  • Β½ cup cocoa powder
  • Β½ tsp baking soda
  • ΒΌ tsp salt
  • Β½ cup allergen friendly chocolate chips (I use Enjoy Life)
  • 11x7 baking pan
  • Olive oil cooking spray
  • Optional: Peppermint candies for topping

Directions

  • Spray your 11x7 baking pan with cooking spray. Set aside and preheat your oven to 350 degrees fahrenheit.
  • In a large mixing bowl, mix together all wet ingredients and sugar with a hand or stand mixer (bananas, egg, coconut oil, mint extract and coconut sugar)
  • In a separate bowl, mix together the dry ingredients (oat flour, protein powder, cocoa powder, baking soda and salt)
  • Slowly mix the dry ingredients into the wet ingredients, scraping the sides when necessary.
  • When the batter is mixed well, hand mix in the chocolate chips.
  • Scrape the batter into the oiled baking pan.
  • Optional step: using a food processor, process a few peppermint candies to top your brownies.
  • Bake at 350 for 20-25 minutes, or until the center is done (Stick a toothpick in the center, and if it comes out clean, they are done!)
  • Allow to cool and then cut into 12 even slices!
