"Power" Bowl!

A flexible recipe packed with protein and nutrients

This bowl of nutrients and protein can essentially be whatever kind of mixture you'd like to put together! Here's my favorite version of the "Power Bowl"!

Power Bowl with beef, vegetables and a sunny-side up egg

Ingredients

  • Cous Cous
  • Olive Oil Spray
  • Pumpkin Seeds
  • Broccoli
  • Brussel Sprouts
  • Butternut Squash
  • Boneless Beef for Stir Fry
  • Avocado
  • Eggs
  • Salt
  • Pepper

Directions

  1. Preheat oven to 400 degrees
  2. Cut butternut squash into cubes
  3. Chop broccoli and brussel sprouts
  4. Place all vegetables on sheet pan and spray lightly with olive oil. Sprinkle salt and pepper to taste

Diced squash, chopped brussel sprouts and chopped broccoli

  1. Roast veggies in oven for approximately 30 minutes
  2. While veggies cook, make cous cous according to package
  3. Heat stir fry pan and spray with olive oil to cook off all stir fry strips. Drain excess liquid.
  4. Peel and dice the avocado
  5. Heat pan and spray with olive oil to cook one egg your favorite way!
