Spinach Cheddar Corn Muffins

A taste of the south without the excess calories, and a little added protein!

Ingredients:

  • 1.5 cups cornmeal
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 teaspoon salt
  • 3 tbsp olive oil
  • 1 cup unsweetened apple sauce
  • 1 egg
  • 1 cup ultra-filtered milk (I use Fairlife Skim)
  • 1/2 cup frozen chopped spinach- thawed, drained and squeezed dry
  • 1 cup 2% shredded cheddar cheese

Directions

  • Preheat oven to 350 degrees F. Lightly spray 12 cup muffin cups with cooking spray.
  • Mix the cornmeal, baking powder, baking soda, and salt in a mixing bowl.
  • Stir the olive oil, egg, milk, spinach, apple sauce and cheddar cheese together in a large mixing bowl until evenly blended.
  • Slowly stir cornmeal mixture into the blended wet ingredients to form a batter.
  • Spoon about 2 tbsp into each muffin cup (evenly distribute the batter as best as you can among the 12 cups)
  • Bake in preheated oven until toothpick inserted into the center of a muffin comes out clean, about 35 minutes.
