Sundried Tomato Burger Salad


  • 1lb lean ground beef (I used Laura's Lean Beef 92/8%)
  • 2 oz diced sundried tomatoes
  • 1 medium egg
  • 1/2 cup plain panko breadcrumbs
  • 2 cups fresh baby spinach
  • 1 oz goat cheese
  • 1 tbsp pesto (I used Pesto Alla Genovese)
  • 2 tbsp balsamic glaze


  • To make burgers, mix together ground beef, sundried tomato, egg and breadcrumbs. Create 4 beef patties out of the mixture.
  • Place on broiler pan and broil for 15 minutes. Flip each burger and broil another 10 minutes or until center reaches desired cook temperature.
  • To assemble salad:

    • Place 2 cups baby spinach in a bowl
    • Place 1 beef patty on top of spinach
    • Top patty with goat cheese and pesto
    • Drizzle balsamic over entire salad
