Vegan Chocolate Chip Banana Protein Muffins

Vegan Chocolate Chip Banana Muffins

Ingredients

  • 4 tbsp coconut oil (melted)
  • 8oz unsweetened plant milk (I used Bolthouse Farms)
  • 3/4 cup coconut flour
  • 6 tbsp vegan chocolate chips
  • 3 scoops vegan chocolate protein powder (I used 1st Phorm)
  • 2 ripe bananas
  • Cooking spray

Directions

  • Preheat oven to 425 degrees
  • Spray 12 cup muffin tin with cooking spray
  • Place all ingredients in food processor and blend (batter will be very thick)

  • Evenly distribute into the 12 cup tin

  • Bake for 25-30 minutes until cooked through and tops of muffins are crisp
  • Enjoy with a cold glass of plant milk!
